Abstract

Stunting is a chronic nutritional problem that is still prevalent in Indonesia, especially among children under five years of age. Inadequate intake of high-quality animal protein is one of the main causes of stunting, necessitating food innovations based on local ingredients to improve nutritional adequacy. This study aims to introduce and implement the use of catfish (Clarias sp.) as a raw material for making fish flakes as a preventive intervention against malnutrition in infants. The Participatory Action Research (PAR) method was applied in the catfish abon innovation program as a response to the problem of malnutrition among infants in Giripurno Village, Karanganyar District, Kebumen Regency, which is largely caused by low animal protein consumption despite the abundance of catfish. The results of the activity showed that catfish has high protein content, healthy fatty acids, and important micronutrients such as phosphorus, selenium, and vitamin B12, which are beneficial for children's growth. The training in making catfish abon was able to change the community's perception of catfish, which was previously less favored, into a processed product that children enjoy and has the potential to become a nutritious and affordable home-based business. This innovation is expected to serve as a nutritious alternative side dish while contributing to reducing stunting rates in the community.
