Abstract

Stunting remains a major public health challenge globally and in Indonesia, with a significant prevalence among children under five. In Kebumen, Central Java, the issue is particularly concerning due to inadequate nutritional intake during early childhood. This community-based project aimed to introduce an innovative stunting prevention approach through the production and distribution of potato-based dim sum, offering a nutritious, appealing alternative to commonly used carrot-based recipes. The method employed was practice and direct implementation involving seven child participants from different neighborhood units, with active engagement of parents. The results indicated a 98% success rate in preparation, acceptance, and consumption, with positive feedback on taste, texture, and nutritional benefits. The activity demonstrated that creative utilization of local ingredients could increase children’s interest in healthy food while contributing to stunting prevention. This model shows potential for replication in other communities as a sustainable nutrition intervention.
