Abstract

In many Indonesian rural regions, banana blossoms are still underutilized despite having substantial nutritional potential. They are frequently thrown away as agricultural waste. This community service project was carried out in Tracap Village, Wonosobo, with the goal of turning banana blossoms into banana blossom floss, a nutritious, and lon-lasting food product. Using the Asset-Based Community Development (ABCD) approach, the program identified local strengths such as abundant banana cultivation, traditional culinary skills, and community cooperation. The purpose of this program is to reduce agricultural waste by utilizing banana blossoms that would otherwise be discarded, to promote and strengthen local potential by introducing innovative processing techniques that build upon existing culinary skills, and to produce a nutritious, long-lasting food product that can be marketed beyond the village. The program was successful in lowering agricultural waste, highlighting the village's potential locally, and equipping locals with skills that will allow them to earn a steady income. In addition to addressing environmental issues, this research shows how participatory techniques of resource optimization can boost rural economic resilience and promote food innovation.
