Community Empowerment through Potato Processing Innovation into Nuggets to Increase the Added Value of Horticultural Products

Citizen empowerment activities in Balun Village, Wanayasa District, Banjarnegara Regency, were carried out in an innovative way of processing potatoes into nuggets, as a step to increase the value of horticultural products. The strategy applied is Participatory Action Research (PAR) which includes steps to analyze the situation, formulate change theory, prepare action plans, and implement activities. The results of the situation analysis indicate that potatoes as the main commodity are marketed in a fresh state at a low price, so that the income obtained by farmers has not reached the maximum potential. Through the formulation of the theory of change by involving the community, it is proposed to process potatoes into nugget products that have a higher selling value and wider market prospects. The training activities involved PKK members in the process of production, packaging, and introduction of simple marketing strategies. The results of this activity show an increase in skills, an understanding of the added value of products, and an encouragement for the community to develop a household business. This program is expected to be the first step towards economic independence at the local level and strengthen the bargaining position for farmers in the market.
